Allagash Brewing Company, out of Portland Maine, is undergoing a historic project - the first 100% authentically, spontaneously fermented beer in the U.S. Allagash has installed a Koelschip (cool ship) - a large open "pan" used to cool the wort and allow the native wild yeast strains and microfauna to ferment the beer - something that was heretofore a process unique to Belgium.
