Hey All, Just to update: The maple syrup appeared to work just fine. I used it to bottle a lager. The beer was great, with a slightly fruity taste, a bit like Steinlager. The head was pure white and very dense. The beer did not have a distinctly m...

I've used honey in the past, but mostly dextrose. I recently switched to sucrose and had equal success. Palmer has a conversion chart or two on his site, and in his books. I've been looking into priming with it again for a lager recipe I'm prepari...

I've used light DME for heavier beers and corn sugar for lighter fare. I was under the impression that DME will give you a creamy malty head, whereas corn sugar will give you more of a crisp highly carbonated result. However, I haven't really test...

I've only ever used corn sugar, so I don't have experience with other primers. Frankly, I haven't trusted them to provide enough fuel for the yeast to do their work in the bottle. I'd be interested to hear others' experiences too!

Hi All, I was wondering what different priming agents people have experimented with for bottle conditioning. I mostly use dry malt extract, but have used sugar and molasses with good success. Recently I tried maple syrup. The jury is still out o...

The OG was only 40 so I am wondering what exactly is fermenting right now. Most of the time the fermenter temperature was between 52 and 55 degrees. It is a mystery to me. I have yet to meet anyone else who has used this yeast, so I do not know if...

Eight weeks ... wow. What was the O.G. of your over-achieving beer? What temp are you fermenting this one at?I've never heard of an ale in active fermentation this long, short of periodic doses of new fermentables in the bucket/carboy/tank ... Ho...

Today I finally bottled the lager I brewed on January 19. Coming out of the fermenter it tasted very good. I would put the taste at about a Steinlager, one of the few commercial lagers I really like. Steinlager is a New Zealand brew that my colleg...

Finally got a chance to look at this. I kind of wonder with a 3 hour mash, how difficult would it be to maintain that temperature and whether you'd get some tannin extraction even at the lower temps. Interesting though.

Brewery Hearing July 13

Hi All,

We finally got our public hearing scheduled for the brewery we are trying to build. This has been a long process. We are confident that we have a good program that will meet the town's requirements and allow us to create something very special in good old Alstead. Support from the public has been tremendous and several of our supporters plan to attend the hearing.

I will post a report on the meeting on my blog (belgianmare.blogspot.com).

It's gonna be fun...TIM

The Worm Squirms

As my followers (?) know , I am building a brewery. So far it has been an adventure. I would have never expected that the biggest snag, to date, would be the field of view on the driveway. Well, it appears we can deal with that. For details see: www.belgianmare.blogspot.com .

I have just started boiling my maple. New brew ideas abound.

But does anyone have any experience with Thames Valley yeast?

Cheers All,

TIM

Hey Tim!

No, I am not the same Hophead. I can't believe anybody else in the world would even think of that name!!!

I just checked out your blog though. Very cool. I will definitely keep up with it in the future. Where 'bouts in NH are you? I grew up in Portsmouth but now live in South Berwick, ME.
