Belgian Mare Brewery Update

Hi All, I know I have not posted in quite some time. I apologize. We have been very busy working on the dream brewery and trying to race the cold weather. This past Sunday we had a big crew out and finished the framing. We hope this coming Sunday to put up the rafters. A photo of the current state of the brewery is below. Dark Rye Malt

I just purchased some dark rye malt from the homebrew shop. I have used it in two beers.  In one, the taste was nearly overpowering.  In the other it was very faint.  So it appears I need a bit of work on getting the right mix.  Has anyone else used dark rye malt? If so, in your experience, what is a good amount to use in a 5 gallon batch? Thanks!See More

Pouring the Walls

Hi All,Just wanted to drop a line and let you know tha twe have started building the brewery. Yesterday, we poured the walls and today we removed the forms. Details are at www.belgianmare.blogspot.com.My advice is that if you pour concrete, get the pump truck! In all my years in the BWCA I have never paddled so hard as yesterday, while trying to get concrete to the back of the forms!Cheers, TIMSee More

How long do you age beer?

I have read much lately about US micros hurrying to ship "fresh" beer for festival entries.  However, many recipes I have call for long term ageing.Since taste evolves with bottle conditioned products, I like to drink each batch over a span of six months to a year.  I would like to hear from some of the other Alchemists about their views on ageing.Recently, I had the last of my New England Cream Lager.  It was six months old and excellent! "Sounds like an interesting experiment. The closest I've done to this is adding champagne yeast to finish out a Belgian strong but that's a pretty standard process. I look forward to hearing how it turns out."

Pouring the Walls

Hi All,

Brewery Hearing July 13

Hi All,



We finally got our public hearing scheduled for the brewery we are trying to build. This has been a long process. We are confident that we have a good program that will meet the town's requirements and allow us to create something very special in good old Alstead. Support from the public has been tremendous and several of our supporters plan to attend the hearing.

The Worm Squirms

As my followers (?) know , I am building a brewery. So far it has been an adventure. I would have never expected that the biggest snag, to date, would be the field of view on the driveway. Well, it appears we can deal with that. For details see: www.belgianmare.blogspot.com .

I have just started boiling my maple. New brew ideas abound.
