You shouldn't have any problems as long as you allow it to fully attenuate. Assuming you've allowed the yeast to consume all the sugars in your wort, the only sugars available during priming will be from the priming sugar.

I wouldn't put more than one or two beers in. Eight days might be enough, especially if the final ABV was fairly low. It can be awfully hard to be patient though.

I use the plastic tube the hydrometer came in, you can also buy a larger glass hydrometer tube for it. I just fill the tube until the hydrometer floats. To get the sample you can use a wine thief or I just use a turkey baster.
