I don't think they should have to if they don't want to serve BMC beers. There are plenty of places that serve only BMC stuff, but that's who they cater to. Places like Stones World Bistro choose to go the other way by catering to the beer geek/en...

Waiting on my Scotch ale mash, first time all-grain.

I wouldn't put more than one or two beers in. Eight days might be enough, especially if the final ABV was fairly low. It can be awfully hard to be patient though.

I use the plastic tube the hydrometer came in, you can also buy a larger glass hydrometer tube for it. I just fill the tube until the hydrometer floats. To get the sample you can use a wine thief or I just use a turkey baster.

Here is one place in SoCal that has it and will ship it too you, http://www.hitimewine.net/index.asp, the shipping is pretty expensive. The Stone website shows that they are distribution to Louisiana, maybe not this years though.
