Here is one more article I found, http://www.byo.com/stories/techniques/article/indices/14-bottling/1212-on-the-yeast-guide-to-bottle-conditioning , apparently Unibroue conditions at 68-77 F. Not surprised that different brewers will use different ranges.

Given what I've read about their fermentation temperatures, I can't say I'm totally shocked. But actually, I am pretty shocked. That's toasty!

Yeah, I was a little surprised at it being that warm.

Wow. Thanks Ray! it seems to be a topic that comes up in bottle conditioning. Everyone thinks warm is too warm. In fact not warm enough!

Found this with a google search, http://www.thirstypilgrim.com/2009/01/first-new-warm-room-next-world.html , actually a little warmer than what you had thought.

Anyone know the temperature range of a Belgian Warm Room for bottle conditioning and can provide a source link? My guess is 73 - 78 F.

Thanks
