I just purchased some dark rye malt from the homebrew shop. I have used it in two beers.  In one, the taste was nearly overpowering.  In the other it was very faint.  So it appears I need a bit of work on getting the right mix. 

 

Has anyone else used dark rye malt? If so, in your experience, what is a good amount to use in a 5 gallon batch?

Hi Tim,

How much rye did you put in the beers that you did, and what styles were they?

I did a rye IPA a couple of months ago and added 1 lb to a 10 gallon batch. That was just right for what I was doing with that beer. Right now I have a rye porter fermenting and I added 1/2 lb to 5 gallons. We'll see what happens after it sits in the bottles for a while, but just tasting it out of the fermenter I can tell that the rye is pretty strong for the style--or at least in addition to the other ingredients I added. My limited experience has taught me that with rye, it's best to start small and add more to subsequent experiments if you want to pump up the flavor. Good luck! Let us know how yours turn out.
